a new take on avocado pasta

A magical evening for an outdoor dinner – the perfect mix of sun and cloud, good company and delicious food! Peter and I have been making the Oh She Glows 15 minute creamy avocado pasta for years, often as a plant-based dish, but since we are not strictly vegetarians, we sometimes mix it up or add to it. This take on the recipe was tasty, so I wanted share it with you!

With inspiration from Nela’s lemon orzo dish (amazing…try it if you get the chance!) we used orzo pasta instead of a spaghetti type noodle. We made the classic creamy avocado pasta sauce but added in barbecued bratwurst sausage from Kuinshoeve Meat Ltd. The subtle sweet flavour of the meat combined with the savoury garlic, lemon and burst of basil in the sauce made for a lovely combination. Topped with some green onion, the flavour was divine.

No pasta meal is complete without bread and wine! We paired the dish with the Lurton fumées blanches sauvignon blanc and an ACE bakery organic multigrain baguette. Might I add that this sauvignon blanc is incredible value! It’s fresh and summery, with citrus notes, slight effervescence and an extremely reasonable price tag. Parfait!

This ACE baguette is sweet and soft and damn good! I’m currently polishing it off as I finish writing this post. I figure a baguette is only good for two days max and I certainly can’t let it go to waste!

  • garlic
  • fresh basil leaves
  • lemons
  • olive oil
  • sea salt & black pepper 
  • bratwurst sausage 
  • ACE multigrain baguette
  • a bottle of fumées blanches sauvignon blanc
